Broccoli Quiche is my most successful way of getting my kids to eat large quantities of veggies.
(Hidden under eggs, cheese and milk)
It's also one of my favorite meals to prepare because for me, it's a "throw-in" dish.
Italian sausage? Sure. Bacon or ham? Yep, that'll work. Peppers, green onions, cheese, garlic, squash....Whatever you have pretty much works.
Here's a comment from Emma a few months back about having Broccoli Quiche one night...As I was making dinner, Emma asks what we were having.
"Brocolli Quiche, same as we had last night." I answered. Emma's eyes got huge....She said "And you're putting all those vegetables in there?!" (I was cutting them up) "Yep I said, and you ATE all of them!" She stared at me "I know!" She said "And I LOVED it!" (she gasps) "That means I ate brocolli, green onions and pepper.....I ate PEPPER...Oh my goodness, I just can't stop falling in love with myself!"
