I spent the weekend in Twin Falls with Andy would was filling in at an assisted living facility for some PT staff who were on vacation.
I went with the intention to plan out my upcoming school year, script out an Oregon Trail co-op class, and finish our family Yellowstone Shutterfly photobook. While I did a little bit of each of those, I spent the bulk of my time pouring over this big, beautiful book I bought at Costco.
Ironic as it may seem, our first night in Twin, Andy and I went to dinner at a Mexican restaurant. As our too-large-for-anyone's-good plates of food arrived, we set down our new Paleo cookbook that we'd been looking through together. Our conversation about a drastic life-style change for our family was had while eating foods we planned to cut out all together.
I'm sure most of you have heard of Paleo before, but in essence, it's based on eliminating all processed foods, sugar, dairy and grains. That may sound extreme, and believe me, we're carefully making our steps slow and sure. Our kids will be maintaining organic dairy in their diets and they won't be 100% sugar free, just close. :) They will still eat bread that is gluten free.
Here's why we made this decision.
We (meaning Andy and I) want to:
- Lose weight,
- solve digestive issues,
- rid our bodies of toxins found in the "average" food supply,
- grow more of what we eat,
- and all around live a more healthy, balanced life.
- We also find this good timing for Olivia who obviously has food sensitivities. Gluten and dairy issues for kids in her generation is a fast-growing epidemic and I want to do the best I can to not continue to pass this on to the next.
My first large discovery is that eating Paleo while on a trip that you didn't pack food for, is very hard! Gone (for now) are the days of running through a drive-up to grab a sandwich and lemonade. Bread will by far, hands down, be the saddest departure from our routine.
Tonight, I'm going to make banana/zucchini bread with coconut flour, coconut oil and orange zest. I'm so anxious (even after 2 1/2 days) to taste bread!
This part is for my own journaling, but if any of you have ideas, I'm always all ears! Especially as to how you no dairy-no gluten folks satisfy a sweet tooth!
Discoveries, New Dishes, Throw-outs
- Threw out: Store-bought Popsicles Made: Homemade Popsicles! Blended watermelon, blueberries, strawberries and mango and bought a set of "rocket" molds from TJ Maxx. (still freezing)
- Made: 2 batches of boiled eggs, will try to keep those always available in fridge
- Lunch option: Chicken Caesar Salad with boiled egg and peppers (look into dairy-free Caesar dressing)
