We started using Coconut Oil about 2 years ago...first in our homemade popcorn, soon we moved on to veggies and eventually it covered just about all of our baking/cooking needs. If you have yet to learn about Omega 3 and Omega 6, it's worth a bit of a case study into what butter, margarine, vegetable oil etc. all contain....and where the healthy balance lies. We love coconut oil. :)
(Disclaimer, we are not health nuts by any stretch of the imagination, we still love our rhubarb desserts and pumpkin spice lattes....But coconut oil was an easy change for us to make and I wanted to pass along the goodness. :))

I have used coconut oil in some things, but I found the taste of coconut was pretty strong, which did not seem to go well with savory things like soups (sauteed celery and onions) and other veggies. I don't use much at a time...maybe a tsp. Am I doing something wrong, is it my particular brand (Dr. Bronner's fresh-pressed virgin), or do you just get used to the flavor after a while? I really would love to use it more, as I know it's super good for you. Thoughts? :)
You know, I had to talk to Andy about this one, because I personally like the flavor of coconut, so I wanted to see if it came through strongly for him when I use it in savory dishes. Here's our conclusion, this costco brand is the first time we've tried extra-virgin, which I wondering if that will make a large difference. The other brand (I just can't think of the name!) from Wal-Mart worked for me with most vegetables and baking. Especially when sauteeing since usually there's a strong veggie in the mix to claim top spot, or even garlic masks the coconut. You're right, it sure doesn't take much so I think your amount is good....It may be a flavor preference, but I'd say to try something less pure than extra-virgin. We might have a LARGE tub sitting around too if I try this and don't care for it. :)
I LOVE coconut, too, but somehow it just doesn't taste right in a cheesy vegetable soup. haha I will have to experiment with some different brands. Almost got the one at Costco but thought I would wait for someone to let me know how it is before I bought such a huge container! ;)
UPDATE: We just tried the extra-virgin last night. WHOA. Coconut!! :) I'd say try again minus extra-virgin and you might really love it. I'm going to save this tub for baking and popcorn.
Thanks, Nellie! I will try some different ones. It's supposed to be good as an all natural moisturizer, too...if you don't mind smelling like you just stepped off the beach, which I don't! :)
